Easy Pumpkin Spice Cake

Are you ready to meet your new favorite recipe? A friend brought this over for dessert one night and everyone devoured it. When I asked her how she made it, she chuckled; because, although this seems like some culinary masterpiece, it only has THREE INGREDIENTS. She passed her secret along to me and now I’m here to pass it along to you.

Here are the three ingredients:

I’ve used different brands of spice cake mixes and they all seem to work about the same. Also, make sure to buy PUMPKIN PUREE and not pumpkin pie filling.

I like to top mine with cream cheese frosting but you can always use homemade frosting, whipped cream or ice cream. These also make great muffins. We admittedly iced ours a little too early because once it came out of the oven and the kids smelled it, they just couldn’t wait!

Unfortunately, that means your icing gets a little runny but there is nothing like warm cake and melty icing! After I iced it, my daughter wanted to decorate it with pumpkin candies.
